What do you do with pumpkins? The ones that aren't carved from Halloween, I usually toss them, but this year, my neighbour gave me one and told me to cook with it. I decided to try pumpkin muffins from scratch, meaning I'd puree the pumpkin myself. These were pretty easy once I had the puree. I used a recipe from Pinterest from Eat. Drink. Love. I used whole wheat flour and honestly, I can't tell the difference. These were great warm with plain cream cheese.
1 cup pumpkin pumpkin puree (not pie filling)
1/2 cup vegetable oil
1 cup of plain Greek yogurt
1 teasponn vanilla extract
1 large egg
1/2 cup light brown brown sugar
1 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
*** add chocolate chips or pecans. I used both, but loved the pecan ones the best.
Preheat oven to 375.
In a large bowl, mix together pumpkin, oil, yogurt, vanilla and egg. Stir in brown sugar.
In a separate bowl, stir together, flour, baking soda, powder, salt and spices.
Fold the dry ingredients in with the wet.
Bake for 20-25 minutes.
