Carbs. I love them. Such a comfort food, right? I love homemade muffins and loaves, but then, who doesn't? I tried searching for a muffin recipe that only called for spelt flour because I'm trying to limit my wheat intake. I couldn't find one that I liked, so I made up my own. Blueberry Spelt Muffins
1/4 cup slightly melted butter
1/4 cup Greek Yogurt ( I used Vanilla, but plain is fine)
1/3 cup sugar
1 egg
1 cup of milk
1 3/4 spelt flour ( I used organic, stoneground spelt flour)
3 tsp baking powder
1/2 tsp salt
1 cup of frozen blueberries
In a large bowl, mix together butter, yogurt, sugar, egg and milk.
In another bowl, combine dry ingredients. Add wet to the dry. Stir to moisten and then add blueberries.
Bake at 350 for 25 minutes.
Makes 9 regular sized muffins or 12 small ones.
